Growing up in Jamaica Scotch bonnet peppers were famous for its fiery heat and unique flavour. Rarely I can recall my mom cooking without some of this pepper. Most often used on curry goat jerk chicken or pork, peppered shrimp. Now living in Canada I wanted to bring that fiery heat from home with the Scotch bonnet peppers and balance it with the sweetness of Ontario’s local honey and pineapple for that unique and palatable pepper sauce made for all hot/pepper sauce lovers.
